The Perfect Summer Salsa
A Fresh Barbecued Tomato Salsa — the perfect salsa for this warm summer! Have some friends over for a fun backyard BBQ and show off your salsa game with this delicious barbecued dip. Best part? It's so easy to make! This wonderful recipe yields approximately 1 quart. The perfect amount to share!
YOUR FRESH INGREDIENTS
Roma Tomatoes - 8 each
Red Onions - 1 small
Jalapenos - 1 or 2
Fresh Garlic - 2 cloves
Olive Oil - 2 Tbl
Lemon Juice - 1-2 oz
Cilantro, chopped - ½ bushel
Salt & Pepper - to taste!
OPTIONAL INGREDIENTS
Chipotle in Adobo (to replace the Jalapenos) - 1 to 2 each
Red Bell Peppers - 1 to 2 each
METHOD:
Toss the tomatoes, onions and jalapeno lightly in the olive oil and cook over a very hot grill until lightly charred on the outside. If your grill grates are too wide you may need to cook or char the garlic on the stove.
Remove from the grill, place in a bowl and cover with plastic wrap. Let set for 15-20 minutes
When cool enough to handle you can either rough chop the vegetables and place in a bowl or blend in a blender. Just depends on whether you like a chunky or smooth salsa.
Add the remaining ingredients and mix well.
Season with salt and black pepper and adjust as needed with more or less lemon and seasoning.
